Traditional country restaurant
Agriturismo Debelis is run by Elisabetta Fragiacomo, and her restaurant exudes a deep love for nature and authenticity. This is evident both in the details of the setting – nestled in lush greenery with a beautiful panoramic view of the sea – and, above all, in the choice of ingredients used in her cuisine.
Meat, wine and vegetables are all home-grown, and when supplies need to be sourced elsewhere, local farms are chosen. The agriturismo also has its own pig farm, from which it produces artisanal sausages, guanciale and pancetta, as well as meat expertly cooked according to tradition.
Meat sourced from other suppliers is carefully selected and purchased only after a visit to the farms of origin, to personally verify that the animals’ welfare is guaranteed and, consequently, that the meat is both flavourful and authentic.
Taking into account the seasonality of produce, the farm’s own production and the availability of fresh, locally sourced ingredients, our menu is updated daily with the finest traditional Trieste dishes, given a modern twist.

From starters to desserts
The Trieste cuisine you can enjoy at Agriturismo Debelis can begin with starters of home-cured meats, the classic charcuterie platter complemented by local cheeses. But particular importance is given to Trieste’s first courses, which consist mainly of minestre and soups, various types of gnocchi, orzotti, fresh tagliatelle and a selection of filled pasta dishes.
Among the soups and broths, particularly popular are ‘La jota’, made with sauerkraut, pancetta, beans and potatoes; ‘Minestra de’ bobici’ with beans, sweetcorn, smoked ham and a sprinkling of pepper; or cream of pea soup, and barley and bean soup. Gnocchi made with various ingredients and served with a succulent meat sauce are often requested.
After the first courses, the meal continues with traditional meat dishes such as goulash, meatballs, succulent pork steaks, cotechino and our own home-made sausages, served with sauerkraut, polenta or vegetables from our own vegetable garden. Mashed potatoes and ‘patate in tecia’ – a typical side dish consisting of potatoes cut into roughly equal-sized pieces and cooked in a sauté of onion and pancetta or guanciale. But no proper meal is complete without a dessert, and we specialise in offering our guests traditional local sweets.

Special vegetarian menu
At our farmhouse, we’ve also thought of those who don’t eat meat. We’ve put together a vegetarian menu, packed with all the vegetables from our own vegetable garden; using pulses and grains, we can prepare delicious soups, whilst the vegetables can be enjoyed raw or grilled.
